Have you been to Chocolate Bar in New York? They carry a bunch of stuff from New York City Confectionists and  work with Jacques selling some of his higher-end confections exclusively.... Not to mention, they're hot chocolate rocks!</description>

Siel, I'm not as dedicated as you about fair trade, but I try when I can.

Robyn, I double-wrap the chocolate into 3-oz. packets and stick them in the fridge to preserve the flavor and texture (especially in the summer, when it gets hot and humid).  I can't easily eat it straight, because I have to wait until the whole thing comes to room temp, or else condensation will cause it to bloom.  And...if I do take a piece, it will throw off my measurements for the entire recipe.</description>

		<description>Thanks for the recap!  Now i kind of wish I went..."kind of" because after going to one of his demos in the summer, I realized I probably shouldn't eat chocolate for breakfast.  (Not that I'm really against the idea, haha.)

I never thought of buying a bag of chocolate, but THAT"S A GOOD IDEA!  Kinda.  I just went there yesterday! I suppose one shouldn't buy pounds of chocolate if not with the intent of making them into something.  I'd just...eat em straight.</description>
