THANKS Guittard, at the November NY Chocolate Show told me a well-kept secret. You can beef up the chocolate percentages by simply adding cacao butter!? I like their pastry pellets or whatever you call them... Their an interesting company and well respected by the pastry industry. THE FDA totally sucks :( Very interesting! THANKS
