I tried the recipe and I agree, a little heavy but a brilliant idea that got me thinking. Why not mix some of my favorite ingredients and try my own version. I made a traditonal shortbread cookie recipe using unsalted butter of course, and put in the chopped bacon in place of something like butterscotch or chocolate chips. Once baked and cooled just a little I dipped half of the cookie in dark chocolate, although semi-sweet could work too. Put it in the fridge briefly to harden the chocolate and cool the cookie a little further.

The cookies were an excellent balance of sweetness and saltiness from the bacon. Something of a starting point to play with perhaps....

Eliana, I've heard about Baked's sweet & salty cake but haven't had a chance to try it yet. Martha Stewart also ran that recipe on her show. It's very involved and has like four sticks of butter.

I've started hearing more and more about baking with bacon and am researching a recipe to use. I came across a caked from the Brooklyn bakery Baked made with chocolate and fleur de sel and it was wonderful. So I can appreciate the balance between sweet and savory. But it is a very delicate balance.

Jessica, I came across your blog while looking at Levain cookies. Then I saw your recent entry of bacon short breads. Have you tried http://www.slashfood.com/2008/12/22/bacon-bourbon-brownies/ ? I did a 3/5s batch and baked them in a 5x9 pan just as a trial. It was the sweet and salty thing and you wouldn't actually know it was bacon. I increased the bacon by a couple of slices, also the bourbon and pecans. And I added a little smoked paprika instead of salt. I thought they were rather tasty and next time I'll try a little chile powder instead of the paprika. Thanks for your Levain recipe. I live in Pennsylvania, but get to NYC fairly often to dance Salsa and it bugs me to spend a fortune on cookies when I'm a good home baker.
